Homemade Pasta Sauce

What you will need:


  • 1 tsp olive oil
  • 2 cloves garlic, crushed
  • 1 yellow capsicum, chopped
  • 500gm fresh medium sized vine ripened tomatoes, chopped
  • 1 cup of fresh rocket chopped
  • 1 cup fresh basil leaves chopped
  • Pinch of salt

Fresh pasta (preferably)

Feta and fresh basil to garnish

How you will make the sauce:

  1. Heat olive oil over a medium heat in a saucepan
  2. Add the crushed garlic and saute for 1-2 minutes
  3. Add capsicum and tomatoes and cook until they begin to soften
  4. Stir through fresh rocket and basil until just wilted and season with salt and pepper
  5. Whilst cooking the sauce, put a pot of water on to boil. Add pasta to a rolling boil and cook until al dente.
  6. Portion pasta into bowls and top with pasta sauce
  7. Garnish with crumbled feta and fresh basil



  • This pasta sauce recipe makes 4 servings
  • Double the recipe to get enough for 6 adult servings
  • Keeps in the fridge for 2-3 days
