Salsa Salsa Salsa

Colourful and spicy – what more could you want?!

My beautiful america/kiwi flatmate is a dab hand whipping up the tastiest salsa around. I decided to try to whip it up myself tonight and here is what we got!

Full of flavour, colour, anti-oxidants and spice it is a fantastic combination to serve up before dinner or with dinner!

KIMERICAN SALSA

  • 2 fresh tomatoes, diced
  • 1/2 yellow pepper, diced
  • 1/2 red pepper, diced
  • 1/2 red onion, diced
  • 1 red chilli, diced finely
  • 1/2 cup coriander, chopped
  • 1/2 lemon, juiced
  • Salt
  1. Combine diced tomatoes, yellow and red pepper, onion and chilli in a bowl. Add a little salt and allow to sit for 10-15 mins.
  2. Prior to serving stir through the juice of half a lemon and the coriander.

Enjoy with corn chips as a chunky salsa, as an accompaniment to fish or chicken or on top of salad!
