Pancetta, Spinach and Thyme Quiche

Ingredients

  • 4 eggs
  • 1/2 cup milk
  • 100g feta
  • 100g pancetta
  • 2 tbsp fresh chopped thyme
  • 1/2 – 1 cup baby spinach, chopped
  • Cherry tomatoes, halved to cover the top
  • Puff pastry (2 sheets)

What to do

  1. Pre-heat oven to 180 degrees
  2. Line a rectangle pie dish with puff pastry pressing into the corners and around the edges
  3. Combine 4-5 whole eggs and whisk together
  4. Stir in milk, feta, pancetta, thyme and baby spinach to the eggs
  5. Pour egg mixture into the pastry lined dish and cover with cherry tomatoes
  6. Cook at 180 degrees for about 35-45 minutes
  7. Remove when golden and egg mixture is set
