Toasted Sesame and Ginger Salmon on Broccolini

500gm salmon fillets with skin off


  • 2 tbsp olive oil
  • 2 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 2 tbsp soy sauce
  • 2 garlic cloves, crushed
  • 1 tbsp freshly grated ginger


  • 1/4 cup honey
  • 1 tsp toasted sesame oil
  • 1 tsp soy sauce
  • 1/2 tsp freshly grated ginger
  • 1/2 tsp toasted sesame seeds

4 green onion, sliced

2 bunches of broccolini


  1. Combine olive oil, rice vinegar, brown sugar, soy sauce, garlic and ginger in a bowl and whisk until combined
  2. Place salmon in a dish and pour marinade over the top, cover and place in the refrigerator for 30 minutes
  3. Prepare an oven tray with aluminium foil and place a greased rack on top in preparation to grill the salmon
  4. After the salmon has been left to marinade for 30 minutes, use tongs to transfer salmon onto the greased rack
  5. Place under the grill for about 15 minutes until crisp on top and cooked through
  6. While the salmon is under the grill, place the left over marinade in a pan and heat, then add the broccolini and stir-fry until cooked through
  7. Place the broccolini on a plate then remove the salmon from the oven and place on top
  8. Whisk together the glaze ingredients and pour over the salmon and broccolini then top with toasted sesame seeds and spring onion
