Quinoa and Bean Spring Salad

It is Spring and there is no better time than now to get back into the salads!

This one is high in protein and low in fat.


What you will need:

1 cup Quinoa

(1 ½ cups water to cook Quinoa)

1 can Four Bean Mix

½ Green Capsicum

1 cup Rocket

1 cup Mint

¼ cup Pumpkin Seeds

Juice of 1 Lemon

What to do:

Place quinoa in a pot with the 1 1/2 cups of water and place over a medium heat. Bring to boil and cook for 15minutes or until all water is absorbed.

Remove from heat and let cool slightly.

Chop the green capsicum, rocket and mint finely.

Mix all ingredients in a large bowl and pour lemon juice over and stir in.

Serves 3-4 as a main or 5-6 as an accompaniment with dinner

Looks delicious! I have just made the Oprah ‘Killer Quinoa Salad’ which is so good it tastes like it’s from a uber trendy cafe. Your salad is next on my list – thanks for sharing!
