There are so many ways to use Lemon Curd as a Sweet Treat!

Lemon curd is made from lemon juice, lemon rind, eggs, butter and sugar. Due to large amount of butter and sugar this is not the sort of spread to have everyday but it is a nice treat in moderation.

Homemade lemon curd does not keep overly well, so ensure it is kept in the refrigerator. It is also an indication that store bought varieties contain many preservatives as it’s shelf life is a lot longer.



  1. Whisk 4 eggs, 1 cup sugar, ½ cup lemon juice and 1 tbsp chopped lemon zest in a bowl set over a pot of simmering water
  2. Whisk in ½ cup of unsalted butter until it melts and the curd begins to thicken
  3. Once thickened, cool curd completely and refrigerate, covered until serving
  4. Serve with pavlova or inside tart shells.
