TGWM Anzac Biscuits

Anzac Biscuit
  • 1 cup wholemeal spelt flour
  • 2/3 cup sugar
  • 1 1/3 cup coconut (desiccated or shredded)
  • 1 1/2 cups wholegrain rolled oats
  • 100g butter
  • 2 tbsp honey
  • 1 tsp baking soda
  • 4 tbsp boiling water

  1. Pre-heat oven to 180 degrees and place baking paper on two baking trays
  2. Mix flour, sugar, coconut, and rolled oats in a large bowl
  3. Melt butter and honey together
  4. Dissolve baking soda in the boiling water and add to the butter and honey
  5. Make a well in the dry ingredients and pour butter mixture into the well
  6. Stir to combine
  7. Place level tablespoons of biscuit mixture onto cold trays lined with baking paper
  8. Bake at 180 degrees for 10-15 minutes or until golden
  9. Remove from oven and cool on wire rack
